Ingredients:
- 4 Russett Potatoes
- 2 Tbsp Extra Virgin Olive Oil
- ½ Cup Chopped Broccoli or Bacon
- 2 Slices American Cheese
- 1 tsp Salt
- 1 Cup Mild Shredded Cheddar Cheese
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1. Cut each potato in half, lengthwise.
- 2. Boil the broccoli until it is al dente or cook the bacon at 400° for 10 minutes.
- 3. Coat the skin side of the potatoes with the salt and Extra Virgin Olive Oil. Place them on a baking sheet with the potato side down.
- 4. Bake the potatoes for approximately 30 minutes at 375°.
- 5. Flip the potatoes and cook them for another 30 minutes.
- 6. Scoop out the center of the potatoes. Set the center aside. Top with the cheese and broccoli or bacon.
- 7. Season with the garlic, onion powder, and lightly salt to taste.
- 8. Bake the potato skins for another 15 minutes.
- Serve hot. This yields approximately 8 potato skins.
