Potato Skins



Ingredients:



  1. 1. Cut each potato in half, lengthwise.
  2. 2. Boil the broccoli until it is al dente or cook the bacon at 400° for 10 minutes.
  3. 3. Coat the skin side of the potatoes with the salt and Extra Virgin Olive Oil. Place them on a baking sheet with the potato side down.
  4. 4. Bake the potatoes for approximately 30 minutes at 375°.
  5. 5. Flip the potatoes and cook them for another 30 minutes.
  6. 6. Scoop out the center of the potatoes. Set the center aside. Top with the cheese and broccoli or bacon.
  7. 7. Season with the garlic, onion powder, and lightly salt to taste.
  8. 8. Bake the potato skins for another 15 minutes.
  9. Serve hot. This yields approximately 8 potato skins.
