Ingredients:
- 2 Large Pink Lady Apples (peeled, sliced, and chopped)
- 1/2 Caster Sugar
- 2/3 Cup Sugar
- 1/4 Cup Chopped Walnut Halves
- 1/2 Cup Whole Milk
- 1/3 Cup Extra Virgin Olive Oil
- 1 Large Egg
- 1/4 Cup Light Brown Sugar
- 1/2 tsp Finely Ground Sea Salt
- 1/4 Cup Chopped Walnuts
- 1 1/4 Cups Unbleached All Purpose Flour
- 1 Tbsp Unsalted Butter
- 1/2 tsp Baking Soda
- 1. Preheat oven to 350°. Line an 8" cake pan with parchment paper. Lightly spray paper with cooking spray.
- 2. Core and slice 1 Pink Lady apple, and place it in a fan shape on bottom of cake pan.
- 3. In a medium mixing bowl, whisk the sugar, butter, milk, oil, and egg together. Stir in the remaining ingredients, including the filling until batter forms. Pour batter evenly in cake pan.
- 4. Place the cake into the oven and bake for 40 to 45 minutes or until a toothpick is inserted and comes out clean.
- To make the topping:
- 5. Mix all ingredients are crumbly forming a streusel.
- 6. Remove the cake from the oven and loosen the cake from the sides of the pan. Invert the cake onto a cake plate, and remove the cake from pan. Peel off the parchment paper.
- 7. Evenly spread the topping over the cake and let stand for 20 minutes.
- Serve warm. This recipe yields 8 slices.
