Pasta Fagioli Soup
Ingredients:
- 2 Cans or 1 1/2 Cups Cannellini Beans
- 2 Large Carrots
- 1 Can Petite Diced Tomatoes
- 1 Cup Parmesan Cheese
- 3 Cups Chicken Broth
- 2 Cups Ditalini Noodles
- 1 tsp Garlic Powder
- 1 Bay Leaf
- 1 tsp Onion Powder
- 1 tsp Thyme
- 1 tsp Basil
- 1/2 tsp Salt
- Soak the Cannellini Beans for 24 hours before you use them, if you are not using canned beans.
- 1. Combine the seasonings and broth, and chop the carrots. Add them to a medium sauce pot.
- 2. If you soaked the beans, drain them and then add them to the pot. Otherwise, open the can and add them to the pot. Add the tomatoes.
- 3. Bring the pot to a boil. Boil the ingredients for approximately 30 minutes or until the carrots are tender.
- 4. Add the cheese and noodles. Bring the soup back to a boil, stirring constantly, and cook the soup for another 15 minutes.
- Serve hot!
